Ingredients

  • 4-6 avocados (soft)
  • 1/4 cup pine nuts ( hazel nuts)
  • Sour cream ( enough to garnish)
  • Chill powder ( a pinch)
  • Garlic powder
  • 2 tbsp Cilantro
  • Micro greens ( enough to garnish)
  • Pesto (red) ( substitute chilli chutney)
  • Lemon or lime
  • 2 tbsp red onion

Steps

1

Take ripe avocados, cut them in half, remove the seeds and with a spoon, scoop out the avacado and spoon into a bowl and mash it up and add in some garlic powder, around ½ tbsp. Add in a splash of lemon. Taste the mixture to see if you need more lemon and garlic powder, please add more for taste.  Add in some chopped/minced cilantro (approx. 2 tbsp).  Salt and pepper. Take some red onion, chop/mince into small pieces 2 tbsps and mix it all.

2

Roast some pine nuts till they are toasty. In a nice serving bowl, put in the avocado and flatten out the dip so that there is a flat serving of avocado. At this stage, you can get artistic with placing the remaining toppings. This is not a layered dip, so the rest of the ingredients are more of a topping.

3

Sprinkle on some chilli powder (instead, you can use paprika) on the avocado. Take some red pesto and with a small spoon place spoonful small amount on the top of avocado randomly. They add dollaps of sour cream.

4

You can use any nuts you have on hand—almonds, walnuts, pecans, or even cashews all work great. Just make sure to toast them first to bring out their flavor and add a satisfying crunch. If the nuts are large, give them a rough chop into smaller pieces so they’re easier to scoop with each bite. If you’re using pine nuts, you can leave them whole and simply sprinkle them over the top of the guacamole for a buttery, delicate finish.

5

Take microgreens and top off the whole dish. You can drizzle on some really good olive oil.

This dip is incredibly versatile, and you can take it to the next level with your choice of toppings.

The key is to use perfectly ripe avocados—firm yet yielding, not too mushy or too hard. You’ll want to mash them to the right consistency for a smooth yet slightly chunky texture.

Feel free to experiment with different nuts! Great substitutes include walnuts, pumpkin seeds, pistachios, or pine nuts, each adding its own unique flavor and crunch.

This is an effortless way to elevate classic guacamole, transforming it into a showstopping appetizer. The combination of crunchy nuts, creamy guacamole, and tangy sour cream creates a perfect balance of textures and flavors—sure to impress your guests!
