My Go To Sauces That Make Any Dish Instantly Better

Fresh, bold, and globally inspired — these are the sauces I reach for when I want to turn a simple meal into something worth gathering around.

One of my favorite kitchen shortcuts is a really good sauce. Not the usual suspects — I’m talking about bright, unexpected, deeply flavorful sauces that bring life to even the simplest ingredients. These are the kinds of sauces that make roasted vegetables exciting, turn plain rice into a full meal, and make hosting feel effortless.

If you’ve ever eaten something and thought, “This is good… but it needs something,” this list is your answer.

These sauces are quick, full of personality, and perfect for weeknight dinners or a last-minute spread when friends come over.

Let’s dive in.

Chimichurri (Argentina): Bright • Herby • Garlicky

I really love this sauce and its so simple to make. I use it to marinate chicken, shrimp or beef. Its an herbicoius sauce that has alot of flavor. The classic — but never boring. Chimichurri brings any dish to life with its fresh herbs, garlic, and tangy vinegar. It tastes like warm-weather grilling even in the middle of winter.

Finely chop parsley and cilantro (if using). Mix with minced garlic, red pepper flakes, oregano, salt, and black pepper. Stir in olive oil and red wine vinegar, then rest 15–20 minutes to let the flavors bloom. Add a squeeze of lemon for brightness.

Chimichurri is one of those magic sauces that can do it all. You can use it as a marinade, a bright finishing sauce, or even a dip. It’s incredibly versatile — bold, herby, and full of robust flavor — and it pairs beautifully with lamb, beef, grilled vegetables, roasted potatoes, or anything that needs a fresh, punchy lift.

Try it with: Grilled steak, roasted vegetables, shrimp, grain bowls, roasted potatoes
Heavenly Table tip: A squeeze of fresh lemon over the top brings the flavors to life and makes every bite feel vibrant.

Zhoug (Yemen): Spicy • Fresh • Herb-Forward

Think of zhoug as chimichurri’s bold, fiery cousin. Cilantro, parsley, garlic, chili, and cumin — it’s the kind of sauce that wakes up your palate immediately.

Blend fresh cilantro, parsley, garlic, green chilies, cumin, salt, and olive oil in a food processor until smooth but still slightly chunky. Add a squeeze of lemon to finish. Use immediately or store in the fridge.

Try it with: Grilled steak, roasted vegetables, shrimp, grain bowls, roasted potatoes
Heavenly Table tip:  A squeeze of lemon brightens everything.

Creamy Lemon Tahini (Middle East): Nutty • Creamy • Bright

This is one of my go-to sauces when I need something cozy and creamy without using dairy. It pairs with almost anything.

Whisk together tahini, lemon juice, minced garlic, and salt. Gradually add cold water until it reaches a smooth, pourable consistency. Adjust seasoning to taste.

Try it with: roasted sweet potatoes, grain bowls, falafel, salads
Heavenly Table tip: Whisk in cold water until it becomes perfectly silky.

Gochujang Butter (Korea)Sweet • Spicy • Savory

This is one of my favourite sauces. It’s so easy and has a delish umami flavour. Its very versatile and can be used with anything really. With three simple ingredients, it has a big impact: melted butter, gochujang, and a little honey or garlic = magic. The kind of sauce that takes noodles or rice from “meh” to “wow.”

Melt butter in a small pan, then stir in gochujang and a little honey or garlic. Cook briefly to combine and serve warm over noodles, rice, or roasted vegetables.

Try it with: rice + fried egg, roasted Brussels sprouts, tofu
Heavenly Table tip: Add a splash of soy for depth.

Salsa Verde (Mexico): Tangy • Bright • Fresh

Fresh tomatillos blended with cilantro, jalapeño, lime, and onion. It’s refreshing, vibrant, and perfect for cutting through richness.

Roast or boil tomatillos until soft. Blend with cilantro, jalapeño, onion, garlic, lime juice, and salt until smooth. Adjust for heat or acidity as desired.

Try it with: fish tacos, chicken, breakfast burritos
Heavenly Table tip: Roast the tomatillos for a deeper flavor.

Green Goddess (California-Inspired): Herbaceous • Creamy • Vibrant

A salad dressing that never disappoints. It makes greens feel luxurious and works as a dip, spread, or drizzle.

Blend together avocado, fresh herbs (tarragon, parsley, chives), garlic, lemon juice, and olive oil until smooth. Add a spoon of yogurt or mayo for creaminess if desired.

Try it with: roasted chicken, kale salads, veggie platters
Heavenly Table tip: Add anchovy if you want the classic version.

Romesco (Spain): Nutty, roasted, slightly sweet

Romesco is a vibrant Spanish sauce made from roasted red peppers, almonds, garlic, and olive oil. It’s nutty, slightly sweet, and full of smoky depth, making it a perfect way to elevate simple dishes. Its bold flavor pairs beautifully with grilled, roasted, or fresh ingredients, bringing a warm, rustic touch to any meal.

Roast red peppers and almonds. Blend with garlic, sherry vinegar, olive oil, and a pinch of smoked paprika until smooth. Adjust seasoning and thickness with olive oil as needed.

Heavenly Table Tip: Toast your almonds and red peppers to really deepen the flavor and bring out the sauce’s rich, smoky character.

Try it with: Grilled fish, roasted peppers, pasta, roasted potatos

Avocado-Cilantro Crema (Mexico-Inspired): Creamy • Fresh • Bright

A smooth, vibrant sauce made from ripe avocado, cilantro, lime, and a touch of yogurt or plant-based milk. Perfect for adding richness without heaviness.

Blend ripe avocado with lime juice, cilantro, garlic, and yogurt (or plant-based milk) until smooth. Season with salt and a touch of water if needed for consistency.

Try it with: Tacos, grilled veggies, grain bowls, roasted corn
Heavenly Table tip: Keep the avocado pit in the container if storing to slow browning.

Yogurt-Dill Sauce (Middle East/Europe Fusion): Creamy • Tangy • Herbaceous

A cooling, creamy sauce made with yogurt, dill, garlic, and lemon. Refreshing and versatile.

Mix Greek yogurt with minced garlic, chopped dill, lemon juice, and salt. Thin with a little water or milk if needed for drizzling.

Try it with: Grilled vegetables, roasted potatoes, grain bowls, falafel
