Ingredients
- 2 cups of fresh Ravioli
- 2 cups Cooked Ham
- 1/2- 1 cup of whipping cream
- 2 strips of Bacon
- 1 cup of Cheddar Cheese

Boil some water make sure it’s heavily salted. Throw in a package of fresh tortellini and follow cooking instructions. With fresh packaged pasta is usually cooks fast. While the pasta is getting cooked, in a separate large non stick pan, cook about two strips of bacon. Cook the bacon till it is crispy. Once cooked take it out and keep he bacon grease in the pan. This is the main part that is required, the back grease adds a lot of flavour.

Chop about two cups of ham into bite-sized pieces and toss them into a pan. Since the ham is already cooked, you just need to lightly fry it until it gets some color. Add about ½ cup of frozen peas (or more if needed) and cook everything together until heated through. Once done, set it aside.

Add the cooked ravioli to the pan with a little butter and fry until it gets a bit of color—you want the edges slightly crispy. Then toss in the ham and peas and cook everything together until heated through.

Add a splash of whipping cream—about ½ to 1 cup if needed—and let it warm slightly to coat the pasta. Grate in about 1 cup of sharp cheddar and mix until melted and creamy. If the sauce becomes too thick, add a little more cream to loosen it.

This pasta is great hot, serve it up hot and you can add some dried parsley to serve.
This pasta is delish. It’s a quick delish meal and you add a lot of extra flavour with the back grease. It gives that flavour of salty pancetta without overpowering it and that rich and smokey flavour.
You can add bacon if you would like but I prefer ham. It is not a salty and the ham is more sublt in flavour but still adds a delish meaty flavour. You are building flavour with the bacon grease. ‘
