Ingredients

  • Two large packets of white or brown mushrooms 
  • ½ cup of pine nuts
  • Medium onion 
  • Three large endives
  • Parsley
  • White wine 
  • 1 tsp garlic paste ( add more if needed)
  • truffle oil ( drizzle)
  • Butter

Tips:

  • For a richer flavor, use white truffle oil instead of regular truffle oil.
  • If you don’t have truffle oil, you can substitute with a splash of soy sauce and a pinch of dried mushrooms.
  • To make these cups even more decadent, top them with a dollop of crème fraîche or a sprinkle of fresh herbs.

Method

  1. Take mushrooms and chop them into small pieces. Keep this on the side.
  2. Chop onion into small pieces
  3. In a large Teflon pan, add some butter and olive oil, fry onions till they are translucent.
  4. Fry onion and mushrooms together to get them nice and soft. Add some more butter. Add some garlic paste.
  5. Fry the mushrooms till you get out all the water, once you get some colour on the mushrooms add some white wine.
  6. Once they are cooked down and the mushrooms are dry and caramelized, then add dried parsley. Once the mushrooms are cooked, drizzle in some truffle oil. Add salt, pepper and lemon juice to taste.
  7. Separately roast pine nuts on a pan till light brown.
  8. Take endives, cut the bottom of the stem off and take off leaves carefully. Place the endive leaves on a plate and fill each one with the mushrooms. You can drizzle some mayo on top or crumble on some goat cheese and top each endive with pine nuts.
